Remember when I got a bit obsessive about getting MIDIs for ring tones on my mobile phone? Well I finally found the right MIDI editor that does what I want in simple terms.

It's called the Jazz++ MIDI sequencer. It's freeware (not sure if it's open-source), runs on Windows and Linux, and it allows for simple selection with cut and paste, so I can easily trim MIDIs for my phone (there's still a few things for me to learn in clipping, but this is way easier than anything else I've seen).

An "also ran" was MIDI Locator Free, but that had weird selection methods and events copied seemed to lose something in the process.
